چکیده
The article presents data on the chemical, fatty acid composition of beef and pork meat in various types fattening. nutritive value obtained from grain traditional cattle feeding, as well concentrate-type was studied. Significant differences content protein, fat, individual acids are shown: saturated, unsaturated polyunsaturated. It has been established that concentrate type feeding leads to a violation scar digestion metabolic processes animal body. Long-term, for 200 days, large amount fivefold increase fat beef, decrease 23.2% concentration protein muscle tissue compared according technology 3.1% with fattening, therefore, quality.
